Crispy Buffalo Potato Salad

Crispy Buffalo Potato Salad
Prep Time: 20 mins Cook Time: 45 mins Total Time: 1 hr 5 mins Servings: 8

Ingredients
4 teaspoons kosher salt, divided
3 pounds baby gold potatoes
3 tablespoons olive oil, divided
1/2 teaspoon freshly ground black pepper
1/2 teaspoon garlic powder
3/4 cup sour cream
1/2 cup mayonnaise
1 (1 ounce) packet ranch seasoning
1 bunch green onions, thinly sliced, divided
2/3 cup diced celery, divided
1/2 cup crumbled blue cheese, divided
10 slices bacon, cooked and crumbled, divided
1/4 cup Buffalo hot sauce, divided

Directions

Place potatoes in a large pot and cover with water. Add 1 tablespoon salt and bring to a boil over high heat. Reduce heat to medium-high; cook until potatoes are tender when pierced with a fork, 12 to 15 minutes; drain.
Preheat the oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with parchment or foil.
Coat the prepared baking sheet with 1 tablespoon olive oil. Add potatoes in a single layer onto the pan. Using a heavy bottomed jar or glass, smash potatoes to 1/4 to 1/2 inch thickness, taking care not to fully separate the potatoes. Drizzle smashed potatoes evenly with remaining oil; sprinkle with remaining teaspoon salt, 1/2 teaspoon pepper, and garlic powder.
Roast potatoes in the preheated oven, until very crispy and browned, 30 to 35 minutes, flipping after 25 minutes.
While potatoes are roasting, prepare the dressing. Combine sour cream, mayonnaise and ranch seasoning. Reserve 1 tablespoon green onion, celery, blue cheese and bacon for garnish; add remaining green onions, celery, blue cheese and bacon to sour cream mixture. Stir well to combine.
Add cooked potatoes to dressing bowl and drizzle with 3 tablespoons hot sauce. Toss mixture together til well coated. Transfer to a serving bowl and top with reserved green onions, celery, blue cheese, and bacon and drizzle with remaining buffalo sauce. Serve room temp or cover and refrigerate until ready to serve.

Recipe: "Santorini Stir-Fry with Chicken and Patty Pan Squash"

Yesterday we found patty pan squash, which I've been wanting to try. So today we made this. :D It turned out delicious.


"Santorini Stir-Fry with Chicken and Patty Pan Squash"


Ingredients:

For the stir-fry:
2 patty pan squashes (about palm size)
half a sweet onion, diced
half a 1.25 pound package of boneless chicken thighs
1 tablespoon light olive oil
a pinch of sea salt

For the sauce:
1 teaspoon Santorini Citrus Seasoning
1-2 teaspoons tapioca starch
1 teaspoon Worcestershire sauce
1 tablespoon lime juice
1 tablespoon full-flavor olive oil

CURRY POTATO SALAD

CURRY POTATO SALAD
Makes 6 servings

2 pounds Yukon Gold potatoes
2 cups plain yogurt
3 cloves garlic, pressed
3 tablespoons Major Grey chutney
1 1/2 teaspoons salt
1 tablespoon plus 1 teaspoon curry powder
1 cup cooked green peas
1 cup chopped onion
1/4 teaspoon cayenne pepper (optional)

Boil potatoes until they are pierced easily with tip of a sharp knife, 15 to 20 minutes. Drain and let cool until you can handle them but they are still warm. Peel and cut into 1-inch pieces.
In large bowl, stir together the yogurt, garlic, chutney, salt, curry powder, peas, onions and, if using, cayenne. Stir in potatoes. Cover and refrigerate several hours or overnight.

Creative Jam

Welcome to the 144th Crowdfunding Creative Jam! This session will run Saturday, June 14-Sunday, June 15. The theme is "Good vs. Bad."

Crowdfunding Creative Jam

Everyone is eligible to post prompts, which may be words or phrases, titles, images, etc. Prompters may request a specific creator, but everyone else may still use that prompt if they wish. Prompts may specify a particular character/world/etc. but creators may use the prompt for something else anyway and post the results. Prompters are still encouraged to post mostly prompts that anyone could use anywhere, as this maximizes the chance of having creators make something based on your prompt. Please title your comment "Prompt" or "Prompts" when providing inspiration so these are easy to find.

Prompt responses may also be treated as prompts and used for further inspiration. For example, a prompt may lead to a sketch which leads to a story, and so on. This kind of cascading inspiration is one of the most fun things about a collective jam session.

Everyone is eligible to use prompts, and everyone who wants to use a given prompt may do so, for maximum flexibility of creator choice in inspiration. You do not have to post a "Claim" reply when you decide to use a prompt, but this does help indicate what is going on so that other prompters can spread out their choice of prompts if they wish.

Creators are encouraged, but not required, to post at least one item free. Likewise, sharing a private copy of material with the prompter is encouraged but not required. Creative material resulting from prompts should be indicated in a reply to the prompt, with a link to the full content elsewhere on the creator's site (if desired); a brief excerpt and/or description of the material may be included in the reply (if desired). It helps to title your comment "Prompt Filled" or something like that so these are easy to identify. There is no time limit on responding to prompts. However, creators are encouraged to post replies sooner rather than later, as the attention of prompters will be highest during and shortly after the session.

Some items created from prompts may become available for sponsorship. Some creators may offer perks for donations, linkbacks, or other activity relating to this project. Check creator comments and links for their respective offerings.

Prompters, creators, and bystanders are expected to behave in a responsible and civil manner. If the moderators have to drag someone out of the sandbox for improper behavior, we will not be amused. Please respect other people's territory and intellectual property rights, and only play with someone else's characters/setting/etc. if you have permission. (Fanfic/fanart freebies are okay.) If you want to invite folks to play with something of yours, title the comment something like "Open Playground" so it's easy to spot. This can be a good way to attract new people to a shared world or open-source project, or just have some good non-canon fun.

Boost the signal! The more people who participate, the more fun this will be. Hopefully we'll see activity from a lot of folks who regularly mention their projects in this community, but new people are always welcome. You can link to this session post or to individual items created from prompts, whatever you think is awesome enough to recommend to your friends.

I mostly post about: What I'm reading (probably some kind of cosmic or folk horror, or something adjacent to that), what video games I've played lately (mostly indie/puzzle/adventure/detective), bits and pieces about my life. Occasionally more personal things if I feel they might be interesting or useful in some way, otherwise I keep it private.

My hobbies are: Drawing, watercolour painting, reading, playing video games, vintage fashion, listening to music (classical, opera, symphonic metal, soundtracks, dark cabaret, electroswing, old jazz, some more modern stuff...), singing and playing the autoharp (I also used to play piano but kinda stopped...still have a keyboard but haven't dug it out in months...), occasionally cross-stitch and embroidery, puzzles, going for walks, learning about pretty much anything but especially animals, mythology, history, and science. When I was a kid, my special interests were Ancient Egypt and Ancient Greece, butterflies, cloud formations, the planet Jupiter, and English folk superstitions, and I feel like I've just carried on from there. During the pandemic I got fixated on learning how to identify birds by their songs. You probably get the idea by now.



My fandoms are: I don't tend to write about fandom stuff but the only fandom I've ever been active in is Pokemon. I still write fanfiction occasionally but it's not something I write about in my journal. Other games I love include Portal and the Rusty Lake games but there's lots. In terms of watching things, I enjoy the Marvel Cinematic Universe, Game of Thrones / House of the Dragon, Black Mirror and Stranger Things. I'm getting back into Welcome to Night Vale (podcast) but I'm like 5 years behind...



I'm looking to meet people who: Share some of my interests? Similar age preferred but not essential. If you read and/or play similar stuff to me I would love to trade recommendations.



My posting schedule tends to be: Once or twice a week right now but during busy times I might drop off for a bit.



When I add people, my dealbreakers are: If your journal is very fandom-focused, I probably won't have much to say in comments. I'd also prefer to avoid lots of posts about religion and/or politics, regardless of "flavour". I don't really care what your political views are (I mean, unless you're a white supremacist or a neo-Nazi...I'm a mixed race Jewish woman so that could be awkward...) but I'd rather not be reading racist, antisemitic, misogynistic, homophobic, etc. content. Or anything that's overly mean-spirited about anyone.



Before adding me, you should know: I live in the UK, in case you wanted to know that. And I'm autistic, not that it comes up very often in my journal posts. Also, as a sort of "reverse" to the above question - I also don't post about my political views (or anything controversial, really) in my journal.

How to Secure Yarn End on a Ball

Use a hair clip.  It holds securely, doesn't damage yarn, molds to the shape of the ball, and tells you exactly where the end is.
